Chilly Day Soup

Ingredients

  • 3-4 cups chicken broth
  • 2 potatoes cubed
  • 1 tbsp flour
  • 1/2 cup light cream
  • 2 onions chopped
  • 1 tomato chopped
  • 1 1/2 tbsp butter
  • 1 clove garlic minced
  • pinch salt
  • pinch pepper
  • parsley minced

Instructions

  • Combine 3 cups of broth, onions, potatoes, garlic, and tomato in a large pot and bring to a boil.
  • Once boiling, reduce heat and cook for approximately 20 minutes until vegetables are tender
  • Blend soup mixture in a blender until creamy, adding small amounts at a time.
  • Melt butter in a saucepan
  • Add flour to butter stirring until smooth to make a roux
  • Gradually add soup mixture to roux stirring constantly.
  • Stir in cream until combined.
  • If your soup is too thick, feel free to add additional chicken broth until you have reached your desired consistency.
  • Add salt and pepper to taste.
  • Garnish with parsley and serve!

Notes

  • This is a potato soup with a thicker consistency. If you are looking for a thinner soup feel free to adjust the amount of potatoes or chicken broth used.
  • This soup can easily be made vegetarian! Simply swap out the chicken broth for vegetable broth.
