- 3-4 cups chicken broth
- 2 potatoes cubed
- 1 tbsp flour
- 1/2 cup light cream
- 2 onions chopped
- 1 tomato chopped
- 1 1/2 tbsp butter
- 1 clove garlic minced
- pinch salt
- pinch pepper
- parsley minced
Combine 3 cups of broth, onions, potatoes, garlic, and tomato in a large pot and bring to a boil.
Once boiling, reduce heat and cook for approximately 20 minutes until vegetables are tender
Blend soup mixture in a blender until creamy, adding small amounts at a time.
Melt butter in a saucepan
Add flour to butter stirring until smooth to make a roux
Gradually add soup mixture to roux stirring constantly.
Stir in cream until combined.
If your soup is too thick, feel free to add additional chicken broth until you have reached your desired consistency.
Add salt and pepper to taste.
Garnish with parsley and serve!
- This is a potato soup with a thicker consistency. If you are looking for a thinner soup feel free to adjust the amount of potatoes or chicken broth used.
- This soup can easily be made vegetarian! Simply swap out the chicken broth for vegetable broth.
