This light and creamy Chilly Day Soup is sure to warm your body and soul! Packed with rich potatoes and fresh veggies and perfect for any of your favorite toppings, this is sure to become one of your new winter favorites!

With a name like “Chilly Day Soup” how could this not be a new winter go to? This soup is quick, easy, full of veggies, and basically everything you need to warm up on a cold winter’s day or night!

One of my favorite parts of southern family cooking, especially Mamaw’s, is the fun recipe names. As I sat in my kitchen on a 30˚ degree February day trying to figure out what recipe to make next, this one literally jumped off the page. A warm, creamy, cozy soup sounded like everything I needed and the name was literally “Chilly Day Soup.”

I know the south is not necessarily known for their “chilly days” but I think Mamaw was on to something with this one. Although this soup may seem simple, it is it’s simplicity that makes it beautiful. It is ready in under an hour with ingredients you probably already have on hand. Plus, it’s classic flavor makes it the perfect base for your favorite soup toppings or sides!

So whether you’re a snow day expert or don’t even own a parka, this soup is sure to warm your body and your soul!

Serving Suggestions:

  • Bacon: I know I can’t be the only one who thinks everything is better with bacon, and this soup is no exception! Top with bacon crumbles to add crunch and that salty kick!
  • Bread: I am a big supporter of paring all soups with some form of carb. Pair this soup with your favorite loaf and use as a dipper or a side for a heartier meal. 
  • Veggies: While this soup uses a classic mix of veggies, feel free to spruce it up with whatever you have on hand! Try adding in carrots, corn or broccoli after blending for a little texture and pop of color! 

To Save for Later…

This soup can easily be made ahead and saved for later. Store in an airtight container in the fridge for up to 3 days or freezer in a freezer safe bag or container for up to 3 months!

Chilly Day Soup

Ingredients

  • 3-4 cups chicken broth
  • 2 potatoes cubed
  • 1 tbsp flour
  • 1/2 cup light cream
  • 2 onions chopped
  • 1 tomato chopped
  • 1 1/2 tbsp butter
  • 1 clove garlic minced
  • pinch salt
  • pinch pepper
  • parsley minced

Instructions

  • Combine 3 cups of broth, onions, potatoes, garlic, and tomato in a large pot and bring to a boil.
  • Once boiling, reduce heat and cook for approximately 20 minutes until vegetables are tender
  • Blend soup mixture in a blender until creamy, adding small amounts at a time.
  • Melt butter in a saucepan
  • Add flour to butter stirring until smooth to make a roux
  • Gradually add soup mixture to roux stirring constantly.
  • Stir in cream until combined.
  • If your soup is too thick, feel free to add additional chicken broth until you have reached your desired consistency.
  • Add salt and pepper to taste.
  • Garnish with parsley and serve!

Notes

  • This is a potato soup with a thicker consistency. If you are looking for a thinner soup feel free to adjust the amount of potatoes or chicken broth used.
  • This soup can easily be made vegetarian! Simply swap out the chicken broth for vegetable broth.
