I don’t know about all of you, but I love getting creative with leftovers, especially after the holidays. It’s the perfect way to keep those delicious holiday meals going all week long! Ham is something that I associate with most holiday meals, especially in the south. From Christmas to Easter, I always looked forward to cooking huge holiday meals with my family. However no matter how many people we could fit in the kitchen, there always seemed to be plenty of leftovers. While I love a fresh ham sandwich as much as the next girl, they can get old pretty fast. That’s where mamaw’s country ham salad comes in.

Just like our Southern Style Cola Ham, Ham salad is another dish I feel is especially southern. While most people I know have had chicken, tuna or egg salad, they all seem slightly confused by the idea of ham salad. While it isn’t much different than any other sandwich salad you may have had, the salty sweetness of the ham pairs so perfectly with the creamy dressing it’s definitely sure to be one of your favorites.

Mamaw’s house was a place where the fridge was always stocked. Whether it was sweet tea or stocked tupperware, you always knew you would never leave hungry. Ham salad was something that was always easy to have on hand, especially after the holidays. It could be quickly prepared in advance and made the perfect sandwich lunch or could be served on crackers for the perfect snack or appetizer. Nothing says a southern spring afternoon like a ham salad sandwich and an ice cold glass of sweet tea.

Serving Suggestions and Adaptations

As an appetizer: Serve in a bowl alongside your favorite crackers for s simple and delicious appetizer!

As a sandwich: Serve on toast with lettuce and tomato for a quick and easy weekday lunch!

Upgrades and add ins: Feel free to spice it up with your favorite add ins! Celery, dried cranberries, hard boiled eggs, the possibilities are endless!

To Save for Later…

Since this recipe includes both meat and mayo it should be refrigerated! It can be stored in an airtight container in the refrigerator for 3-5 days!

Country Ham Salad

Ingredients

  • cup mayonnaise
  • cup sour cream
  • 1 tbsp mustard
  • 1 tbsp lemon juice
  • 2 cup cooked chicken chopped
  • 2 cup cooked ham diced
  • ¼ cup chopped pecans or slivered almonds
  • salt and pepper to taste

Instructions

  • In a large bowl combine mayonnaise, sour cream, mustard and lemon juice.
  • Mix in chicken and ham and stir until thoroughly coated.
  • Fold in nuts until well combined.
  • Serve and enjoy!

Notes

  • This recipe is a great basic ham salad, so feel free to spice it up with any of your favorite salad additions!
  • While the original recipe calls for both ham and chicken feel free to use one or the other based on what you have on hand!
  • To keep it authentic, I used canned cooked chicken but feel free to use fresh cooked chicken if you prefer!
  • I chose to use pecans but feel free to use whatever nuts you prefer or omit them entirely!
