Chicken and dumplings is always one of those dishes that I forget to love. Living in the north it is not a meal I see very often. Unless it is on a restaurant menu or somebody else’s social media account, I typically forget it’s even an option. But for some reason, every time I do get it I devour the entire thing. It is nostalgic, cozy, and I truly believe it can literally warm your soul. Recently I was in Mississippi visiting my family for the holiday and we visited a barbecue restaurant in Tupelo. I noticed the special that day was “Smoked Chicken and Dumplings” and so of course I ordered it. It came out in a big tub and honestly the first thing I thought was “There is no way I am going to be able to eat all of this…” but lo and behold, in less than 10 minutes I had finished not only the chicken and dumplings but all of the sides and a margarita. Since that day (and my return to cold and gray PA winters) I have craved a good down home chicken and dumplings.

Now I am not going to lie to you, Mississippi is not exactly known for its cold winters. It’s more of a “flurries close school for a week” kind of place. But just because my dad could wear shorts on Christmas Day, doesn’t mean he can’t enjoy this cozy southern staple! This chicken and dumpling stew is everything southern cooking should be. It’s simple, classic, and can warm your heart no matter how cold (or warm) it is outside!

What makes this chicken and dumplings stew so special is how truly easy it is! I think the number one reason I forget how much I love chicken and dumplings is that it seems like too much work! However, when I came across this recipe in Mamaw’s cookbook and saw that I could make homemade chicken and dumplings in only one pot I knew I needed to share!

This simple chicken and dumpling stew is sure to be your new winter favorite! WIth only 6 ingredients and a classic homemade flavor, this One Pot Chicken and Dumpling Stew will make your next snowy (or sunny) day a cozy one!
